Cabbage Fritters
This recipe combines thinly sliced cabbage and grated carrot and is a delicious dinner. Ensure you have that dollop of mustardy mayonnaise for the perfect combination.

INGREDIENTS
¼ head of cabbage
• 1 small onion
• 1 cup grated carrot
• ½ cup flour
• 1 tsp baking powder
• 1 tsp cumin
• 2 eggs
• ½ cup milk
• Salt
• Pepper
DIJON MUSTARD MAYO:
• 3 tablespoons mayonnaise
• 1 tsp Dijon mustard

METHOD:
- Slice the cabbage thinly and chop it.
- Slice the onion.
- Grate the carrots.
- Place the cabbage, onion, and carrots in a large bowl. Using your hands, massage the cabbage, carrots, and onions together for 2 minutes to soften slightly.
- In a bowl, combine the dry ingredients: flour, baking powder, salt, pepper, and cumin. Mix to evenly disperse the ingredients.
- Add the flour mixture to the cabbage mixture and mix well to combine.
- In a small bowl, beat the eggs and milk together. Add the egg and milk mixture to the cabbage and carrots. Mix well to combine.
- Heat a large frying pan with olive oil over medium heat. It's best to cook the fritters in batches. Spoon the fritters into the pan, cooking 3-4 fritters at a time. Cook on each side for 3 minutes until golden brown.
- Repeat until all the fritter batter is cooked.
- To make the Dijon mustard mayo, combine the mayonnaise and Dijon mustard together.
- Best served hot.
- Store in an airtight container in the fridge for up to 3 days.
