METHOD:

  • Slice the cabbage thinly and chop it.
  • Slice the onion.
  • Grate the carrots.
  • Place the cabbage, onion, and carrots in a large bowl. Using your hands, massage the cabbage, carrots, and onions together for 2 minutes to soften slightly.
  • In a bowl, combine the dry ingredients: flour, baking powder, salt, pepper, and cumin. Mix to evenly disperse the ingredients.
  • Add the flour mixture to the cabbage mixture and mix well to combine.
  • In a small bowl, beat the eggs and milk together. Add the egg and milk mixture to the cabbage and carrots. Mix well to combine.
  • Heat a large frying pan with olive oil over medium heat. It's best to cook the fritters in batches. Spoon the fritters into the pan, cooking 3-4 fritters at a time. Cook on each side for 3 minutes until golden brown.
  • Repeat until all the fritter batter is cooked.
  • To make the Dijon mustard mayo, combine the mayonnaise and Dijon mustard together.
  • Best served hot.
  • Store in an airtight container in the fridge for up to 3 days.
