Battered Apple Pancakes
These low waste fluffy battered apple pancakes are delicious for dessert or breakfast. INGREDIENTS
3 large apples or 4 small.
200g plain flour
4 tsp baking powder
1 tablespoon sugar
1 tsp cinnamon
1 egg
250 ml milk
2 tablespoon melted butter
INSTRUCTIONS
Slice the apples into 5-6 slices depending on the size. Leave the skin on. Using a corer or the bottom of a round icing nozzle remove the core from each apple slice. Set aside.
In a large bowl add the dry ingredients, the flour, sugar, cinnamon, baking powder. Add the eggs, melted butter. Whisk in the milk slowly. Mix till well combined and all the lumps are removed.
Heat a large frying pan with butter to medium heat. Dip each of the apples into the batter one by one. Place each apple slice into the pan. You will need to cook in batches. Cook on either side for 2-3 minutes till golden brown.
Serve for breakfast or as tasty dessert. Garnish with icing sugar or maple syrup.
